PRIVATE - Cooking with Historical Flair: Recipes and Flavors of Ancient Grains
A day to spend in an ancient rural village that stretches across a hillside
of olive groves. The farm staff will tell you the story of the families who have populated this village by working the land and who still continue to have an organic production in the traditional way. Explanation of the procedure of processing of wheat into flour and identification and reuse of by-products: bran and middlings.
At the end possibility of choosing between one of the two workshops: 
? Study of different types of grains and flours and their use in the preparation
dough. Ready the dough you will make the "scilatello" al ferretto that will then be
tasted.
? Lessons on the characteristics of different flours and aptitudes for
breadmaking. Yeasts and leavening. We will knead loaves and make the
traditional Calabrian pizza that we will taste as soon as it is ready.
